Workshop. Beer brewing

We are following a Lambic Brewing method, this is an open spontaneous fermentation – which means the beer is left open to the elements in its initial fermentation stage.

We left ours in the garden of the sculpture school which was the original botanical garden of Copenhagen. It was left open in the garden for 3 days. We read it the poem – ‘being free’ by Leanna O’Sullivan from the collection of poems, “waiting for my clothes”,

and then we took it back to our department and put the lid back on. It will be hopefully ready in 6 months.
